Potato Pie, or “Krompirusa” is a traditional dish enjoyed in many Balkan countries. This savory pie features layers of thin, crispy pastry filled with a seasoned potato mixture. It’s comforting, hearty, and perfect for a family meal.

Directions
Prepare the Dough: Mix the Dough: In a large bowl, mix flour and salt. Gradually add lukewarm water and vegetable oil, mixing until a dough forms. Knead the dough on a floured surface for about 10 minutes until smooth and elastic. Divide the dough into 4 equal parts, shape them into balls, cover with a clean kitchen towel, and let them rest for about 30 minutes.
Prepare the Filling: Prepare the Potatoes: Peel and grate the potatoes. Squeeze out any excess moisture using a clean kitchen towel or cheesecloth. In a large bowl, combine the grated potatoes, chopped onion, vegetable oil, salt, black pepper, paprika, and chopped parsley. Mix well.
Assemble the Pie: Roll Out the Dough: On a floured surface, roll out each dough ball into a thin sheet (as thin as you can without tearing it). If you have a large work surface, you can use your hands to gently stretch the dough further by pulling it from the edges.
Fill and Roll: Spread a portion of the potato filling evenly over the stretched dough. Roll the dough into a long cylinder. Coil the cylinder into a spiral shape and place it in the center of a greased baking pan. Repeat with the remaining dough balls and filling, coiling each filled roll around the center spiral in the baking pan.
Bake the Pie: Brush and Bake: Preheat the oven to 200°C (400°F). In a small bowl, mix vegetable oil and water. Brush the mixture generously over the top of the pie. Bake for 45-50 minutes, or until the pie is golden brown and crispy.
